VEGAN CHRISTMAS CHOCOLATE BALLS
These are amazing!!! And can be enjoyed all year round :)
Ingredients :
10 Medjool Dates : pitted, soaked in boiling spring water for 10 minutes
1 cup almond meal
1/2 cup desiccated coconut
1/2 cup raw cacao powder
50ml rum OR a few drops of sweet orange essential oil (for the whole family)
1 tablespoon spring water
2 tablespoons coconut oil (will be liquid at body temperature)
Desiccated coconut for rolling the balls.
Method:
Blend all ingredients together!
Refridgerate for 5 minutes until firm to make rolling in coconut easier.
Roll in desiccated coconut and refridgerate in an airtight container until required.
Stores for around a week in the fridge if they last that long :)
* Variations can include cranberries, raspberries or cacao nibs... or anything you love with chocolate!
NUT BUTTER CHOCOLATE FUDGE
This is a superfood superhealthy snack that can be enjoyed anytime (just not all at once!)
Ingredients :
*1/4 cup maple syrup (optional - I find this sweet enough without maple syrup)
1/2 cup cashew or macadamia or almond butter
1/2 cup coconut oil (melt over very low heat)
1/2 cup raw cacao powder
Pinch Celtic Sea Salt
1 tsp Vanilla extract or scrape vanilla seeds from a vanilla bean
Method
Mix all ingredients slowly over a very low heat in a small saucepan for 2 minutes. Once assimilated, pour into a silicon ice cube tray and refridgerate (this allows you to pop out the fudge pieces easily). Keep refridgerated. Enjoy!
*If you omit maple syrup, this recipe also works well with dried fruit such as cherries, goldenberries or cranberries (Tip : use non sulfur dried fruit).
