Strawberry Cheesecake - Vegan

Strawberry Cheesecake

Base ingredients

1 cup dates, pitted and soaked in boiling water

1/2 tsp Celtic Sea Salt

1 cup almond meal

1 1/2 tbsp raw cacao powder

The Cheesecake filling

2 cups raw cashews soaked overnight

400g organic strawberries - fresh or frozen

1/2 cup maple syrup

1/2 cup overnight soaked chia seeds

400ml coconut cream

Juice of one lemon

The method

Blend all base ingredients, and press into round springform pan or similar and refridgerate.

Next, blend drained cashews, strawberries, coconut cream and maple syrup until very fine and smoothe. Once blended, place in a bowl and quickly stir in the chia seed mixture and lemon juice.

Simply pour the strawberry mixture over the base, let set for a few hours or preferably overnight and serve with a smile :) and chocolate shavings and extra strawberries if desired.
