Roast Tofurkey makes the most ideal centrepiece for your Christmas table!

ROAST TOFURKEY
INGREDIENTS
800g firm tofu
1/4 cup tamari
5 cloves garlic chopped finely
1/2 lemon - juice
1/4 cup tomato paste
1/4 cup olive oil
1/4 cup mixed seasoning : sage, thyme, marjoram, rosemary, nutmeg, black pepper, parsley and celery seed.
1 cup buckwheat or besan flour
*A teaspoon of liquid smoke or paprika in the tofu mixture is optional
*A little extra olive oil and balsamic vinegar for basting.
METHOD
Prepare the tofu by rinsing, and draining and patting dry with clean tea towl or paper towel to remove excess moisture.
In a blender, place tofu, lemon juice, tamari, garlic, tomato paste and seasoning and mix on low speed until blended well.
Transfer to a bowl and stir in the buckwheat or besan flour until assimilated.
Place half the mixture in a large lined loaf pan, allowing the mixture to be pressed up the sides of the pan, so that there is a hollow centre in which to place the *stuffing (if desired - recipe below). Fill the centre with stuffing and spread the remaining tofu mixture on the top. If you are not using stuffing, simply press flat into the pan.
Bake for 30 mins in a medium oven, and then remove tofurkey from the oven and flip loaf pan tofurkey upside down onto a baking tray, remove lining and brush with oil and balsamic dressing and return to oven for 30 mins.
Remove from the oven and let sit for 5 mins before slicing and serving.
TOFURKEY STUFFING
INGREDIENTS
1 large mushroom
1/4 cup chopped cashews
1/4 cup gluten free TVP soy mince soaked in 1/4 cup water
1 small onion
1 clove garlic
1 carrot
1 potato
METHOD
Chop all ingredients finely and sauteé in a small saucepan for 15 minutes until softened.
*Serve with tahini gravy, cranberry sauce, roast vegetables or potato bake. Recipes below.
TAHINI GRAVY
INGREDIENTS
1 cup nutritional yeast
1/2 cup buckwheat or besan flour
1/2 cup unhulled tahini
1/2 cup tamari
1/2 cup balsamic vinegar
METHOD
In a small saucepan lightly toast the nutritional yeast, add salt and dry flour and assimilate, add wet ingredients and lightly whisk together. Bring to a boil then simmer for a few minutes until desired consistency is reached.
CREAMY POTATO BAKE
INGREDIENTS
1 kg organic potatoes (Dutch cream if you can get them, but any will be fine) sliced finely.
1 large onion sliced finely
1 clove garlic peeled and cut in half
400ml coconut cream eg Ayam brand
100ml soy milk
1 teaspoon Celtic Sea salt
METHOD
Rub the cut garlic around the edges and base of your baking dish, and then layer the potatoes and onion. Once complete pour over the can of coconut cream. Then whisk the salt and soy milk and pour over the top.
Bake in a medium oven for 45-60 minutes until slightly browned on top.
*Serve with your usual baked vegetables (carrots, parsnips, Brussels sprouts, potatoes, pumpkin, red onion), cranberry sauce, salads and regular vegetable side dishes.
